You can ferment all kitchen waste in it, but it’s unnecessary to include paper, as the Bokashi process doesn’t compost the waste; it ferments and pickles it. Since paper doesn’t produce odours, it can be added to a regular composter without issue. In our office, we utilise a Bokashi Bucket for lunch scraps, fruit peelings, etc., while we shred all paper waste separately for packaging.
